If you can't manage the whole nut, would nut butters (almond,cashew) work for you? Also, home made hummus as chickpeas/grabanzos are an OK source of zinc (I over-soak and over cook the chick peas, and blend -the blending usually breaks down the fibers enough not to cause problems for me, but you could also strain it after blending). Just a thought.

You may want to talk to an ET nurse about the retracted stoma problem if you haven't already. There may be other solutions besides limiting your diet. I have had 5 stomas total (long story) and one of them would retract, causing leaks. It was a temporary stoma, so eventually that problem went away, but most stomas don't retract.
